What is the essential, functional difference between the various types of hide glue, such as cow, rabbit or fish glue?
I'll give you a hint, it's not bond strength.

RE: Open time, The only function of open time I can think of is that the local PANERA is not usually open when I get there in the morning and I NEED MY COFFEE !!!!

I truly have no idea so I'll guess and suggest it may have something to do with how well they take, or don't take finishes?

Actually I wasn't aware there was a hide glue made from fishes. Nor rabbits for that matter.

Hey Newtooth,

I think that I should give you the answer as you've bracketed it pretty well already.

The answer that I was looking for is "melting point", which is of course related to set time, etc.

Fish glue, or insinglass, is traditionally made from the swim bladders of sturgeon; it has the lowest melting point. Fish glue is traditionally used for very delicate work, where high clarity is required. Book binding is one use.

Rabbit glue is the traditional base for gesso, the sizing used for canvases under oil paints and guilding; it has the next highest melting point. Luthiers often prefer rabbit glue.

Cow and horse hide glues have the highest melting point of the three and are used mainly in furniture manufacture.

All hide glues are made from collagen, which surprisingly similar throughout the animal kingdom. Just a few small chemical differences make a noticeable difference in strength, melting point, clarity and shrinkage.
