Well I'm not from there, but I've been through there many times on my way to The Ice and back. I also work with many who've spent a good deal of time on both the North and South Islands. If you have some questions, shoot them to me. If I don't know, I'm sure I can find out for you real quick.
Some bits I know:
Some of the best Fly Fishing in the world is there, and they have laws in place that allow you to cross people's private property to access the river.
Christchurch is a must see.
Sea Kayaking around Wellington is fantastic.
Akaroa on the South side of the Banks Penninsula is beautiful and a good place to swim with Dolphins.
Fiordland, South West side of the South Island is also a must see.
Scuba diving is good, but a lot colder than the Great Barrier Reef.
Sailing is great anywhere.
When you fly into Aukland, they have a second terminal that you have to either walk to or take a bus to, about 100 m, to get to the Domestic flights.
Beautiful country and lots to see and do. Just remeber though, they drive on the worng side of the road.
