I have a very similar problem, especially in the spring. We'll get cold nights followed by warm daytime temps when the humidity goes up. Since the shop is insulated, it remains lower in temps than the outside. Thus I'm fighting condensation all the time.

Paste wax is a good choice for resisting rust but on the suggestion of Tom (TMS) I'll also use wax paper to burnish the acre or so of cast iron that's exposed. WD40 & Scotch Brite is the best I've found for removing the pale thin brown haze that sometimes forms before I can catch the moisture.

Never tried covering stuff up with a bed sheet but I did think, at one time, plastic sheeting or the like might be a good idea. Nope. Made things worse if anything.

Basically now when I anticipate these conditions I'll build a nice fire in the shop stove to 1) raise the temps and 2) dry out the air since a wood fire does seem to do that. Otherwise it's just an on going battle.
