Ok so I’m a woodworker too...but since I’m building my own home I have a door adjustment question. Today I finally installed my big 2” thick entrance door with attached side lights and transom. The jamb sections are all plumb and now shimmed and secured to the structure framing. I used 4 very heavy duty 4 1/2” hinges. These are not adjustable hinges. The door operates perfectly. However low on the latch side it is not contacting the weatherstrip. The door is not flush with the stile in that area. I can see a sliver of daylight in that area. I checked for warp and found none. So my question; is there any way working with the hinges to change the plane and or gaps to get a tighter seal when closed? Thank you for any info on this.

Assuming that the 4 hinges are mortised in both the door and the jamb, I would think it would be easier to shim the threshold to achieve a better fit. If either the door or jamb is NOT mortised then you might adjust the door hang by removing the screws, setting the door on a spacer and re-attaching the hinges.
